This is Dylan's favourite type of potatoes.
INGREDIENTS
4 tbsp Vegetable oil
4 large Potatoes (Maris piper or
other floury variety)
2 sprigs of Thyme
2 sprigs of Rosemary
EQUIPMENT
Potato peeler
Sharp knife
Chopping Board
Baking tin
METHOD
1. Heat oven to 220°c or 200°c fan.
2. put the oil in the tray and place in oven to heat up
3. Peel and cut potatoes into 2cm cubes.
4. Put garlic, rosemary, thyme and vegetable oil in the hot baking tray. Make sure everything is covered in the oil then put back in the oven for 5 minutes.
5. Quickly take the tray out of the oven. Add the potatoes and make sure everything is coated well in the hot oil, be quick here coating in the hot oil will stop the potatoes sticking. Put back in oven.
6. Roast for 30 minutes turning over the potatoes after 15 minutes to make sure all sides are crsipy.
