Oh so simple, these Chicken Tikka Skewers are delicious. We cook them in the oven, but you can also grill or barbecue them. Take the time to marinade them to let the flavour develop.

INGREDIENTS

3 Chicken Breasts

100g Greek Yogurt

1 tbs Garlic and Ginger paste

1 tbsp Curry powder

1 tsp Ground Cumin

1 tsp Ground Coriander

1 tsp Ground Turmeric

1 tsp Paprika

1 tsp Chilli powder

1 tbsp Lemon juice

EQUIPMENT

Large mixing bowl

Sharp knife

Baking tray

4 skewers, ideally metal, but if using wooden ones make sure that they are soaked in water for an hour before you use them to stop them burning.

METHOD

1. Cut into chicken breasts into pieces that are roughly 3cm square. Although not easy, try and get the pieces similar sizes so that they cook evenly.

2 Put all the other ingredients in a large mixing bowl and mix together to create the marinade.

3. Add the chicken to the bowl and stir until it is all coated in the marinade. Ideally leave in the fridge for a few hours, but the longer you can leave it the better.

4. About an hour before you want to start cooking, take the chicken out of the fridge and let it come up to room temperature.

5. Heat the oven to 220°c or 200°c fan. The hotter the oven the better.

6. Thread the chicken pieces onto the skewers and set above a baking tray. Ideally the tray with have raised edges so that the skewers aren't resting on the tray.

7. Cook the skewers in the oven for 10-12 minutes or until the chicken is cooked all the way through.

8. Serve with rice and salad.
