Turkey curry is not just for Christmas! Turkey mince is generally lower in fat and calories than beef mince so is a healthy option. It can be bland on its own, so adding the flavours of curry makes it an irresistible dinner. Serve with brioche buns and a big dollop of our mango chutney mayo.

INGREDIENTS

500g Turkey mince

1 garlic clove finely chopped

1/2 red onion finely chopped

6 pieces of Sun-dried tomatoes

finely chopped

1-2 tbsp curry powder (Madras Curry

powder is our favourite)

1 Egg

A little vegetable oil

Salt and pepper

4 burger buns

Mango Chutney Mayonnaise

4 tbsp Mayonnaise

1 tbsp Mango Chutney

1 tsp Curry powder

Salt and Pepper

EQUIPMENT

2 Mixing bowls

Sharp knife

Griddle pan

Frying pan

Hands that you are happy to get messy!

METHOD

1. Heat a frying pan over a medium heat with a tbsp of vegetable oil. Once hot, add in the chopped red onion. It should gently sizzle, but not so much that it colours the onion. Keep it at a gentle sizzle for 6 minutes until the onion starts to become soft. This gives you a nice sweet onion flavour.

2 Add the garlic and sun-dried tomatoes to the pan and gently fry with the onion for another 3 minutes. The smell will be amazing. After 3 minutes, take off the heat and let it all cool down.

3. While you are waiting for the onion mixture to cool, prepared the Mayonnaise. Put all the ingredients in a small mixing bowl and stir. Add a tbsp of water to give it a slightly runnier texture. Keep this until you assemble your burgers.

4. Once the onion mixture is cool enough to handle put it in a large bowl with the Turkey mince, Curry powder, Egg, Salt and Pepper. Time to get messy! Get you hands in and mix it all together until everything is thoroughly mixed.

5. Divide the mixture into 4 equal portions and shape into burgers. Don't worry of the mix seems sloppy, turkey is a naturally low fat meat so the moisture is needed for when you cook.

6. Heat a griddle pan or frying pan over a medium to high heat adding a touch of vegetable oil. Once hot add the burgers. Cook on one side for about 8-10 minutes or until you can see the burger changing colour at least half way up the burger. Don't be tempted to move it around too much or it will crumble, just let it cook. After 6 mins, flip and cook on the other side for another 6-8 minutes.

7. Once cooked, leave to rest for a couple of minutes and serve in brioche buns with a slice of lettuce and tomato, topped with the Mango Chutney Mayonnaise.

7. Serve with potatoes of your choice and a nice salad coated in our lovely dressing.
